Pear & Berry Crumble

Ingredients
4 large pears, peeled, cored and diced
1 cup frozen blueberries, strawberries, blackberries or raspberries
1 tbsp fresh orange juice
1 tsp lemon rind grated
2 tbsp honey or rice malt syrup
1 cup almond meal, (OR i prefer 1/2 almond meal, 1/2 oats, but this is not gluten free)
2 tbsp coconut oil
1 tbsp honey or rice malt syrup
1/2 tsp cinnamon
Optional- add desiccated coconut to crumble for a coconut flavour
This wintery dessert is light, crunchy and delicious! Gluten and dairy free this is a yummy healthy option for the whole family to enjoy in the cooler months.
Instructions
- Preheat oven to 180C degrees. Place first 5 ingredients except 1 Tbsp honey in a saucepan and cook covered on medium heat for 5 minutes. Remove lid and simmer for another 5 minutes.
- Drain juice through a sieve and pour back into the pan, adding remaining honey and simmer until juice is reduced by half. Set aside for serving.
- Place fruit into 4 individual serve oven ramekins.
- Make the crumble by placing all remaining ingredients into a bowl and rubbing between the fingers to create chunky crumbs.
- Top fruit with crumble. Bake for 30 minutes or until golden. Top with reserved and reduced syrup.
Notes
Serving Suggestion:
Serve warm topped with coconut cream or yogurt.
