This wintery dessert is light, crunchy and delicious! Gluten and dairy free this is a yummy healthy option for the whole family to enjoy in the cooler months.
Pear & Berry Crumble

Ingredients
4 large pears, peeled, cored and diced
1 cup frozen blueberries, strawberries, blackberries or raspberries
1 tbsp fresh orange juice
1 tsp lemon rind grated
2 tbsp honey or rice malt syrup
1 cup almond meal, (OR i prefer 1/2 almond meal, 1/2 oats, but this is not gluten free)
2 tbsp coconut oil
1 tbsp honey or rice malt syrup
1/2 tsp cinnamon
Optional- add desiccated coconut to crumble for a coconut flavour
Instructions
  1. Preheat oven to 180C degrees. Place first 5 ingredients except 1 Tbsp honey in a saucepan and cook covered on medium heat for 5 minutes. Remove lid and simmer for another 5 minutes.
  2. Drain juice through a sieve and pour back into the pan, adding remaining honey and simmer until juice is reduced by half. Set aside for serving.
  3. Place fruit into 4 individual serve oven ramekins.
  4. Make the crumble by placing all remaining ingredients into a bowl and rubbing between the fingers to create chunky crumbs.
  5. Top fruit with crumble. Bake for 30 minutes or until golden. Top with reserved and reduced syrup.
Notes

Serving Suggestion:

Serve warm topped with coconut cream or yogurt.
