These "Green Hulk" Super Green Pancakes make the perfect Sunday breakfast, snack, dessert or lunchbox filler for the little superhero’s in your life!!!  So simple, nutritious and delicious, they are also suitable to freeze making them an easy lunchbox filler that can be prepared ahead of time.

“Green Hulk” Super Green Pancakes

Ingredients
1 banana
2 eggs
1 large handful of spinach or kale
1/2 cup almond meal (or oats)
1 tsp cinnamon
1 tsp coconut oil
*Optional 1 scoop of natural vanilla protein powder for an extra dose of goodness! (I use a wholefood based, gf, df and non-gmo vanilla protein powder)
Instructions
  1. Combine all ingredients in your blender and blend!
  2. Then, heat a teaspoon of coconut oil in a frypan on medium heat and cook in batches until golden on each side.
Notes

Serving Suggestions:

  • Top with a generous tablespoon of coconut yoghurt and drizzle with raw honey.
  • Sprinkle with your favourite crushed nuts.
  • These are also delicious with fresh berries.
